Crunchy Italian Potatoes

Simple sidie, combination of crunchy potato with the spices of italy. Great with Steak or an alternative to roast spud!!!
Ingredients:
4 hand size potaoes, (skin on)
4 tbls extra virgin olive oil
1 tbls plain flour
2 tbls spicy italian herbs
1 teasp cracked black pepper
1 teasp salt
sprinkle of parsley
Directions:
1. Wash potatoes and dice into large cubes.
2. In an oven safe bowl combine the remaining ingredients and mix well.
3. Add the potatoes coating evenly in the mixture.
4. Bake in the oven on med-high for 30 mintues or until golden, soft and slightly crunchy.
