Crunchy Ice Cream Sandwiches

Why buy expensive ready-made ice cream sandwiches when you can make your own just as easily and know what is in them? These are delicious, and will be an instant 'hit'! :+D
Ingredients:
the chocolate sauce will thicken if made in advance; microwave briefly on defrost before serving.
1 cup finely chopped crunchy granola bars (5 nature valley granola bars)
1/2 cup finely chopped pecans
1/2 cup skor bar bits
4 cups mocha almond fudge or butterscotch ripple ice cream, softened slightly
3/4 cup whipping cream
1/2 cup semi-sweet chocolate chips
1/2 tsp pure vanilla essence
1 cup summer berries such as small whole strawberries, raspberries and blueberries
Directions:
1. Combine finely chopped granola bars, pecans and skor bits in a bowl.
2. Line an 8-inch square baking pan with plastic wrap letting wrap hang generously over sides of pan.
3. Sprinkle half of the crumb mixture in bottom of pan.
4. Spread with ice cream.
5. Sprinkle remaining crumbs over top, then pat gently. Cover with plastic wrap and freeze for eight hours or overnight.
6. For the Chocolate Sauce:
7. Heat whipping cream in a small saucepan over medium heat until piping hot.
8. Remove from heat and add chocolate chips.
9. Whisk until melted and smooth.
10. Stir in vanilla.
11. Let cool slightly, then transfer to a covered container and refrigerate.
12. To serve, lift dessert out of pan and cut into 6 pieces.
13. Warm the chocolate sauve by defrosting in microwave.
14. Spread chocolate sauce on serving plates and top with ice cream sandwiches.
15. Garnish with berries.
