CRUNCHY CUCUMBERS AND ONIONS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Darby Estate in Wills Point, Texas in 1982.
Ingredients:
1 large cucumber peeled and sliced thinly
1 red onion thinly sliced
1/4 cup white vinegar
1/2 cup plain salad oil
1 heaping tablespoon granulated sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
1. Soak peeled and sliced cucumbers in a salt water solution in refrigerator for 2 hours.
2. While this is soaking prepare oil and vinegar mixture altering oil to vinegar ratio to taste.
3. To make mixture first dissolve sugar in vinegar then mix in oil.
4. Start with the ratio of approximately 1/2 cup oil to 1/4 cup vinegar.
5. Mix the thinly sliced onion into this liquid coating well then refrigerate.
6. Drain cucumbers and rinse slightly.
7. When fully drained of excess water mix with the onions and liquid mixture.
8. Add pepper then refrigerate for 30 minutes before serving.
