I have not tried this recipe. I got this recipe from 501 Recipes For A Low Carb Life.
Ingredients:
3 tablespoons cornmeal
1 tablespoon flour
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon oregano leaves
1/2 teaspoon salt (to taste)
cayenne pepper
4 boneless skinless chicken breast halves
1 tablespoon vegetable oil
Directions:
1. Combine the cornmeal, flour, chili powder, cumin, oregano, salt and cayenne in a shallow dish.
2. Press chicken into mixture to coat all over. Heat the oil in a nonstick skillet over medium heat until hot and cook the chicken, turning once, until it is no longer pink inside, 10-15 minutes.
