Crunchy Chicken Salad

This salad was served at a friend's baby shower. It can be served on lettuce as a spread for crackers or as sandwiches using small croissants.
Ingredients:
5 1/2 cups chicken (cooked and cubed)
3 eggs (hardcooked and chopped)
1 cup celery, chopped
1 cup sweet pickle, cubed
1 cup toasted pecans, chopped
1 cup green seedless grape, halved
1 cup mayonnaise (can use light)
1 (8 ounce) can water chestnuts, drained and chopped
1 (8 ounce) can pineapple tidbits, drained and chopped
1/2 cup pimento stuffed olive, chopped
1 small onion, chopped (red or can use green onions)
1 (2 ounce) jar pimentos, drained and diced
1 tablespoon fresh lemon juice
Directions:
1. Combine all ingredients; blend well. Chill. Serve on lettuce cups or use for sandwiches.
