Traditional English crumpets Ingredients:
450 g plain white flour (or 500 g for pikelets) |
350 ml warm milk |
350 ml warm water |
5 g powdered yeast |
10 g salt |
1 tsp baking powder |
Directions:
1. Whist the flour, milk, water and yeast in a large mixing bowl. 2. Cover with cling-film and leave for an hour (or more) until very bubbly. 3. When ready to cook, gently whisk in the salt and baking powder. 4. Cook in a lightly-greased, heavy-based frying pan using crumpet rings (or make thicker batter with the extra 50 g flour if you don't have them). Place the ring on the pan and fill to just below to top. 5. Cook for 5 minutes on each side. As it cooks, large bubbles should appear on the top. If they don't appear, whisk in a little more water. 6. Eat immediately with butter or cool on a wire rack to toast later. |
