This is an authentic side dish but, at our house, we just love it for the main course when the gardne are comin' in. We serve the crowder peas over hot cornbread and have fresh juicy red tomato diced up to sprinkle over the top of it all. Read more . It's one of our favorites.
Ingredients:
2-bags frozen crowder peas (or a mess of fresh peas is gardens are comin' in
1 slice of raw bacon, cut into three peices with the kitchen shears
salt and pepper to taste
enough water to cover about 1/4-inch
Directions:
1. Put crowder peas in large pot,; add enough water to cover 1/4-inch.
2. Add bacon and a little bit salt and pepper and bring to ta boil over medium heat.
3. Cover and lower heat and cook about 10 minutes.
4. Taste for salt and pepper and add more if needed.
5. Continue to cook the peas, uncovered, until they are tender.
6. Take potato masher and smash up some of the peas while still cooking to thicken the juices.
7. Serve as I described above.

9. NOTE: If you're blessed to have fresh corn and cucumbers, all the better. Serve the corn with seasoned butter and marinate the cucs overnight for a nice side salad.
