I combined a couple of different beef stew recipes to come up with this one and it was a keeper! Very hearty and flavorful.
Ingredients:
2 lb. of beef stew meat cut into big chunks
1 packet good quality salsa seasoning (don't buy stuff loaded with msg and artificial flavorings!)
4 sliced carrots
4 chopped potatoes
3 cups of water
1 small can tomato paste
1 15 oz. can diced tomatoes
1 small can chopped green chilis
2 tbls. worcester sauce
1 tsp. garlic salt
1 tsp. cumin or to taste
1/2 tsp freshly ground black pepper
Directions:
1. Place carrots, potatos and chilies into bottom of crockpot.
2. Put beef on top of vegetables.
3. Pour salsa seasoning on top of beef.
4. Mix can of tomato paste into water (or broth if you prefer to use I have used beer instead of water, yummy!)
5. Add worchester sauce, garlic salt, cumin and black pepper into water/tomato mixture and pour on top of meat and veggies.
6. Pour undrained can of tomatoes on top of this.
7. Avoid the temptation to stir....just leave it the way it is!
8. Cook on low for 7-8 hours or until beef is tender.
