Colorful, one pot, high protein, easy!
Ingredients:
1.54 lbs chicken breast
2 cups (267g) carrots
3 stalks (130g) celery
1/2 cup (54g) green pepper
1 small (148g) yellow squash
1 cup (108g) portabella mushroom
1 med (87g) leek
2 cup (184g) green beans
1 cup (186g) couscous
4 cup (960g) fat free chicken broth
Directions:
1. Cut chicken into bite size pieces
2. Slice carrots into 1 inch slices
3. Slice celery into 1 inch slices
4. Slice green pepper and cross-cut slices into small squares
5. Slice yellow squash into 1/2 in slices
6. Quarter mushrooms
7. Peel, wash, slice leek
8. Add all ingredients except couscous to crock pot with a dash of ground pepper and a dash of poultry seasoning.
9. Cook on high 4 hours. Add couscous and continue cooking about another 15 min til couscous is done. Fluff and eat...Enjoy!!
