Crockpot Athenian Shrimp in Tomato and Feta

Crock pot Shrimp Dinner.
Ingredients:
2 tablespoons olive oil
2 medium onion, chop
2 garlic clove, minced
56 oz crushed tomatoes, in thick puree
12 ounces tomato paste
1/2 cup dry wine
4 tablespoons chopped parsley
2 teaspoon dried oregano
1/2 teaspoon black pepper, freshly-ground
2 1/2 pounds shrimp, peeled, deveined
2 ounces feta cheese, in 1/4 cubes
Directions:
1. Heat oil and saute onions and garlic until the onions are softened.
2. Transfer the onions and garlic to a 5 quart crock pot.
3. Add the tomatoes, the tomato paste, wine, parsley, oregano and black pepper.
4. Cover and cook for 6 to 8 hours on low.
5. Increase the heat to High and add the shrimp.
6. Cook for about 15 minutes.
7. Stir in the Feta Cheese and serve immediately.
