This is a very satisfying, comfort food style dish that's very easy to make and even easier to eat. This is modified from a recipe I found on RecipeZaar by SAMS_Club. The recipe itself is lower fat than is shown due to a communication problem with the recipe analyzer regarding the definition of fat free sour cream.
Ingredients:
1 1/4 lbs boneless skinless chicken breast, cut into bite-sized chunks (sams_club says frozen breasts work out fine too)
30 ounce great northern beans or navy beans, rinsed and drained
15 ounce hominy or white corn, rinsed and drained
1 1/4 ounce taco seasoning
4 1/2 ounce of chopped green chiles
10 3/4 ounce condensed cream of chicken soup, fat free
14 oz chicken broth, light or fat free
1/2 cup sour cream, fat free
1 chopped green onion (optional)
1 oz reduced fat or fat free cheese (jack or white cheddar are best) (optional)
Directions:
1. Place the chicken in your slow cooker and top it with beans and corn.
2. In a medium bowl, combine the taco seasoning, chiles, condensed soup, and chicken broth and pour the mixture over top of the ingredients already in the crock pot.
3. Cover and cook on low for 8 to 10 hours.
4. Before serving, stir gently to break up chicken, then stir in the sour cream.
5. Serve topped with green onions and shredded cheese, if desired.
