On a tight budget with alot of canned goods. After roaming on RecipeZaar I got brilliant idea to make veggie soup in the crock pot. I opened the cupboard and decided what to put in there and make sure it could last a couple days for dinner and lunch.... YUM YUM, glad I did it.
Ingredients:
3 (8 ounce) cans chicken broth
2 (8 ounce) cans green beans
1 (8 ounce) can corn
2 (8 ounce) cans of diced tomatoes and green chilies (love spicy food)
1 ounce lipton onion soup mix, packet
1 tablespoon minced garlic
1 (8 ounce) can mixed vegetables
1 (8 ounce) can carrots
10 -12 turkey meatballs
Directions:
1. In crock pot, mix all of the above ingredients including the meatballs.
2. Add your spices: I didn't include in ingredient list; everyone has their own preference. I added: garlic powder, Lawry's seasoned salt, pepper, celery seed, parsley, and basil. ( I LOVES SPICES! ).
3. Turn on Low for 4-5 hours.
4. While crock pot is going make noodles, I used spiral rotini, you could use elbow, penne, etc -.
5. Let noodles cool and put to the side.
6. When soup is ready, put noodles in bowl, and scoop on the yummy veggie soup and lay right over top the noodles.
