Crock Pot Russian Cabbage Soup

My own rendition of the hearty sweet and sour soup that reflects my Russian-Jewish heritage. Measurements are approximate and should be adjusted according to taste.
Ingredients:
6 cups beef broth
1 onion, chopped
1 lb beef stew meat, in small chunks
1 (15 ounce) can diced tomatoes, undrained
4 cups red cabbage, chopped
2 cups sauerkraut, undrained
3/4 cup sugar
1/2 cup lemon juice
1/4 cup tomato sauce
1/4 cup ketchup
1/2 cup carrot, chopped (optional)
1/2 cup celery, chopped (optional)
salt and pepper, to taste
Directions:
1. Put meat and onion in crock pot and cover with beef broth and tomatoes.
2. Cook on low for three hours.
3. Add the rest of the ingredients.
4. Cook on low for three hours.
5. Add salt and pepper as needed.
