This recipe sounds crazy, and my family looked at me like I'd lost my mind when I told them what I'd put in it, but it really does taste fantastic. The grapes I used were too tart to be eaten by themselves. I use an immersion blender, but you can use a regular blender or food processor if you'd like.
Ingredients:
1 (3 lb) package pork tenderloin, plain (should be two in a package)
1 (16 ounce) can jellied cranberry sauce
1 cup water
4 beef bouillon cubes
1 tablespoon onion powder
1/2 tablespoon garlic powder
2 cups red seedless grapes, halved (these don't have to be sweet)
salt and pepper (to taste)
Directions:
1. Combine cranberry sauce and water in crockpot, cutting to spread the cranberry sauce evenly. Add bouillon cubes, onion powder, garlic powder, salt and pepper. Scatter grapes throughout sauce.
2. Place tenderloins on top of sauce mixture, and season with salt and pepper if desired. Cook in crockpot, on high, for 3.5 hours.
3. Remove pork from crockpot. Using immersion blender, blend sauce until mostly smooth. (You'll have some grape skin that is difficult to blend but it's very tender.).
4. Return pork to crockpot, and continue cooking for 45 minutes.
