I've had this recipe from for some time: it is a lower-fat, lower-sodium approach that leaves open a lot of room for variations and personal preferences
Ingredients:
1 cup rice, white, long-grain
1 small onion, diced
2 tablespoons olive oil
8 garlic cloves, peeled and smashed
1/2 cup white wine, dry
1/2 cup water
1 cup lemon juice, fresh
1 dash tabasco sauce
6 chicken breasts, bone-in, skin removed
salt and pepper
Directions:
1. Put first eight ingredients in slow cooker. Stir. Place chicken breasts on top. Season with salt and pepper. Cover and cook on low 5-6 hours.
