Crock Pot Hawaiian Chicken

This is a simple and fantastic recipe I got from sherr1 on the IBS message boards . If you're looking for something with a zing, this isn't it. It has a subtle but deliciously fruity flavor. The sauce is wonderful over white rice!
Ingredients:
2 -3 lbs boneless skinless chicken breasts
1 (16 ounce) can pineapple slices, drained
1 (15 ounce) can mandarin oranges, drained
1/4 cup cornstarch
1/4 cup brown sugar
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon ground ginger
Directions:
1. Combine all ingredients in the crock pot.
2. Stir well.
3. Cover and cook for 4-5 hours on low or 2-3 hours on high.
4. Serve with steamed rice.
5. Enjoy!
