Crock Pot Green Beans

This is an adaptation from my Grandma Smith's green beans. Green Beans are not crips but full of flavor. Grandma used her own home canned green beans, and cooked all day on the stove. I use canned beans when I can't get fresh. But I like the crock pot for cooking, using less energy.
Ingredients:
8 cups clean and snapped green beans, this is 2 lbs
1/2 lb sliced bacon (to taste)
1 small onion, chopped
salt & pepper
Directions:
1. This recipe fills my crock pot that is why I use 2 pots, one for mixing one for cooking, If your cooking this on the stove you'll only need one.
2. Chop bacon into small size pieces. Remember when cooking they will absorb the water and get bigger.
3. In skillet over low-med heat brown bacon, transfer to big bowl or pot.
4. (Use as much onion as you wish I do use more than one small one).
5. Cook onion in bacon fat until translucent, you may want to remove some of the bacon fat-depends on your diet preference.
6. Rub a little bacon fat around sides of crock pot.
7. Drain water of store canned beans in sink, add all ingredients into over size pot mix and dump into crock pot.
8. Then add water to barely cover.
9. OR at this point barely cover with water in your stove pot, cover with lid cook on low all day.
10. To add zip add a little crushed red pepper flakes.
11. Add recommended amount of warm water, for the crock pot.
12. My pot is 2 -1/2 qt and I add 3/4 to 1 full quart of water, so I add just until I can see the water line in the crock pot.
13. I also add 2 strips of uncooked bacon on top.
14. If you do not like bacon fat or can not use,( sub what ever kind of fat you desire, it is also good with butter .) To adjust for flavor I would use Wright's All Natural Hickory Seasoning, Liquid Smoke Concentrate. If you do not use Wright's your on your own! I have tried others but found they do not have the flavor I want, and just do not taste right.
15. Cover set on low all day.a minimum of 4 hours better after 6.
16. Now you might think this will serve a lot of people but remember they cook down.
17. Note: Grandma cooked 2 quarts for 6 people, she would cook these all day on low on the stove.
