Crock Pot Country Pork Sandwiches

I made this up one day when pork roasts were on sale and it was to hot out to eat a heavy roast dinner.
Ingredients:
3 -4 lbs lean pork roast, cubed
2 stalks celery, finely diced
1 large onion, diced
3 tablespoons oil
1 teaspoon garlic powder
1 teaspoon lawrys salt
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon rosemary
1/2 teaspoon thyme
1/2 teaspoon pepper
1/2 teaspoon parsley
1/8 teaspoon poultry seasoning
1/2 cup chicken broth
1/2 cup dry sherry
Directions:
1. Saute celery and onion in oil in a large skillet.
2. Add meat, brown well.
3. Place in crock pot.
4. Add remaining ingredients.
5. Stir well.
6. Cook 8-10 hours on low until meat shreds.
7. Serve on hard rolls.
