  1. Insert Garlic in roast; place in crock pot with whole pepper and half bunch of cilontro which has been chopped. season to taste pour in beer. Cook on high 4 to 6 hours until fork tender. Remove meat; shred. Served in tortillas with tomato, onion, cilontro, and cheese. Great with refried beans and cabbage salad.
