Crock Pot Barbecued Beans

While in Mexico over the winter we really look forward to an occasional meal of 'comfort food', and this is one of our favorites! Recipe comes from Cook's Illustrated. Time indicated does not include time required to soak the beans. This recipe requires a large crock pot (6 qt.) however it can easily be adjusted to fit smaller crock pots (like mine)!
Ingredients:
2 teaspoons vegetable oil
3 medium onions, chopped
8 garlic cloves, minced
1 1/2 cups barbecue sauce
4 cups small dried white beans, picked over, rinsed and soaked overnight (2 pounds)
8 slices bacon, chopped fine
1/2 cup packed dark brown sugar
6 cups boiling water
1 tablespoon spicy brown mustard
1/2 cup strong black coffee (optional)

Directions:
1. Night before prepare the beans and soak overnight.
2. Heat oil in skillet over medium heat until shimmering.
3. Add the onions and 1/4 teaspoon salt and saute until opaque.
4. Stir in garlic and continue cooking for another 15 seconds.
5. Stir in 1 cup of barbecue sauce.
6. Bring to a simmer; pour into the slow cooker.
7. Drain the beans and add to the slow cooker.
8. Add bacon and brown sugar and then the boiling water.
9. Cover and cook on low for 9-10 hours, or high for 6-7 hours, until the beans are soft. (Note times will vary with the different brands of crock pots).
10. Thirty minutes before serving, stir in the mustard, coffee and remaining 1/4 cup barbecue sauce, and adjust the salt and pepper as needed.
