I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from Mr. Food's Quick And Easy Side Dishes. Note: you may need to add an additional 1/4 cup of oil for the second batch of potatoes.
Ingredients:
1 1/2 lbs sweet potatoes (3-4)
1/2 cup vegetable oil
2 tablespoons maple syrup or 2 tablespoons pancake syrup
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
Directions:
1. Wash the potatoes well. Cut each potato in half lengthwise, then cut each half lengthwise into 3 wedges.
2. In a medium sized skillet, heat the oil over medium-high heat. Place half of the potatoes in the hot oil, turning and cooking until they are crispy and brown. Remove the potatoes from the skillet and drain on paper towels.
3. Place on a cookie sheet and keep warm in a 200 oven. Repeat with the remaining potatoes.
4. In a shallow bowl, combine the syrup, nutmeg, and cinnamon. Using a pastry brush, brush the potato wedges with the syrup mixture; serve immediately.
