Crispy Onion Rings

These are served great as a snack or as a side dish...so yummy
Ingredients:
2 large (about 800g) onions
plain flour
2 eggs, lightly beaten
1 cup (80g) grated parmesan cheese
2 cups (140g) stale breadcrumbs
2 teaspoons seasoned pepper
oil for deep-frying
Directions:
1. Cut onions into 5mm slices. Toss rings in flour; dip into eggs, then combined cheese, breadcrumbs and pepper. Refrigerate onion rings 1 hour. Deep-fry onion rings in hot oil until browned and crisp; drain on absorbent paper.
