Crispy Noodle Salad With Sweet And Sour Dressing

This is a great summertime salad, It's very refreshing and requires NO cooking. You could add chicken or shrimp and make it a main course.
Ingredients:
1 sack mixed greens
1 cup bean sprouts
1cup shredded carrots
3 radishes, sliced
2 scallions, chopped
1/2 red, yellow or orange pepper sliced into very thin strips
2 cups fried noodles, available in bulk bins at asian market or you can use uncooked ramen noodle broken into small pieces
2 tbsp sweet plum sauce or duck sauce
2 tbsp rice wine vinegar, cider or white may be substituted
1/3 cup light oil, peanut, canola, olive- just eyeball it
salt and pepper
Directions:
1. In a bowl, combine greens, bean sprouts, carrots, scallions, radishes, bell pepper and half of the noodles
2. Whisk together plum sauce, vinegar, and stream in oil while whisking.
3. Dress salad and toss with salt and pepper to your taste.
4. Serve salad with remaining crispy noodle as garnsih.
