I found this recipe in a Seattle area newspaper when I was visiting family several years ago. It sounded too good to pass up and I was right. It has since become a family favorite. It make a large quantity of cookies, but they don't seem to last long. Don't substitute margarine for butter. The results will not be the same.
Ingredients:
1 cup butter, softened
1 cup brown sugar
1 cup granulated sugar
1 cup vegetable oil
1 egg
1 teaspoon vanilla
3 1/2 cups flour
1 tablespoon baking soda
1/2 teaspoon salt
1 cup corn flakes, lightly crushed
1 cup oatmeal
2 cups chocolate chips
1 cup pecans, chopped
Directions:
1. In large mixing bowl, cream butter and sugars. Add oil, egg, and vanilla.
2. In separate bowl, combine flour, baking soda, and salt; add to creamed mixture.
3. Mix in corn flakes and oatmeal, then stir in chocolate chips and nuts.
4. Drop by spoonfuls onto cookie sheet.
5. Bake at 350 degrees for 12 to 14 minutes or until lightly browned. (If using insulated cookie sheets, bake 18 to 20 minutes.).
