Crepes Made With Rice Flour |

If you are unable to enjoy crepes prepared the usual way with all-purpose flour, here is an alternative. Ingredients:
1 cup rice flour |
1/4 teaspoon salt |
2 eggs, beaten |
1 cup 2% milk or you can substitute soy or rice milk |
note: to add a little extra flavour, you can use vanilla flavoured rice milk. |
1 tablespoon melted butter or margarine |
sour cream |
nutmeg, freshly grated |
your choice of fresh fruit or preserves |
Directions:
1. In a medium sized mixing bowl, beat eggs. 2. Add the rest of the ingredients and blend until smooth. 3. Pour, using 1/4 cup measure into a medium sized, hot, lightly greased non-stick skillet. 4. Turn skillet to evenly distribute batter in a circle. 5. Cook about 30 seconds per side. 6. Set aside cooked crepes on a plate and keep warm. 7. Serve with a dollop of sour cream and it is optional to garnish with grated nutmeg. 8. Fresh fruit or jam preserves are always a tasty topping. |
