An easy crepe recipe that can be savory or sweet, depending upon what you put inside and on top! You can make them as a breakfast meal, main meal stuffed with creamed seafood or chicken, or a fancy dessert topped with whipped cream and fruit.
Ingredients:
2 eggs, room temperature
1 3/4 oz flour (all-purpose or wheat)
3 tbsp milk
1 tbsp melted butter
dash of sugar or salt (depending upon filling)
Directions:
1. Mix all ingredients in a small mixing bowl, using a whisk or electric mixer on low speed
2. Heat a small to medium sized non-stick frying pan, adding a small square of butter. Do not allow butter to burn or smoke.
3. Pour two to three Tbsp of batter into center of heated pan
4. Rotate pan by the handle to spread the batter evenly across the pan
5. Cook for 30 seconds (or until bubbles start to appear) and flip with a spatula . Cook until other side is done, aprox 15 seconds.
6. Place on a heated plate, fill and fold.
7. Top with your choice of topping
