Crepes
Ingredients:
1 cup flour
1 1/4 cup soymilk
1 egg
1 teaspoon baking powder
1 teaspoon vanilla
1 pinch of salt
Directions:
1. Mix dry ingredients in medium size bowl.
2. Add egg, soymilk and vanilla.
3. Let rest for 5 - 10 minutes.
4. Heat pan and spray lightly with cooking spray.
5. Pour 2 ounces of batter with a ladle and tilt pan to spread batter. Batter should cover the entire pan.
6. With a rubber spatula, begin working your way in gently through sides of crepe and flip.
7. Serve with honey, butter, syrup or fruit. you can fill them with pudding or custard and top them with fruit.
