i use an omelet pan to make my crepes hense a serving of 40 however if you use a large skillet this will do about 20 adaquatly. These can be done in advance and reheated in the microwave later as well.
Ingredients:
1 cup milk, 2
3 cups water
4 eggs, extra large
2 cup flour
2 tbsp butter
1 pinch salt
Directions:
1. sift flour into a bowl make a well in the middle, crack one egg at a time and mix with an electronic hand whisk (or by hand) then add the milk and water. Melt the butter in the microwave and add that, mixing well.
2. Tap mixture on the table top to knock out bubbles and leave to sit for about 20 minutes. (not in the fridge)
3. Heat a non stick skillet using med/high heat, spray with cooking spray, take skillet off of the heat and and pour batter (about 1/4 cup) until there is a thin layer (or as thick as you like) place back on heat and cook until the top has firmed up and it no longer sticks then flip or use a spatular and turn over, cook until it no longer sticks on the reverse side then serve.
