1/4 cup green pepper, minced |
2 tablespoons chopped onions |
2 tablespoons margarine (reduced calorie) |
1 1/2 cups canned tomatoes, chopped |
1/4 cup mushroom, sliced |
1/4 cup green olives, sliced |
1/4 teaspoon salt |
pepper |
1 tablespoon dry sherry |
Directions:
1. Combine green pepper, onion and margarine in a 3 qt microwave casserole or bowl. 2. Cover with lid or plastic wrap. 3. On High, cook 1-1 1/2 minutes. 4. Add tomatoes, mushrooms and olives. 5. Cover and return to microwave. 6. Cook on high 2 1/2 minutes. 7. Stir in salt, pepper and sherry. |
