Creole Chicken & Sausage Gumbo

From my collection of handwritten recipes. This uses pre-cooked chicken.
Ingredients:
2 medium onions, diced
1 green pepper, diced
1 red pepper, diced
1 jalapeno, diced
1 tablespoon garlic, crushed
1/4 cup butter
4 cups water
1 tablespoon instant beef bouillon (or au jus mix)
1 tablespoon chicken base (or bouillon cube)
1 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
1 (10 ounce) package frozen okra
1 (16 ounce) can tomato paste
2 -3 lbs cooked chicken
1 lb sausage (andouille is best)
1 (10 ounce) package frozen corn
hot pepper sauce (like tabasco)
Directions:
1. In a large pot, cook and stir onion, peppers and garlic in butter over low heat until onions are tender (about 5 minutes). Add remaining ingredients. Heat to boiling, reduce heat. Simmer 45 minutes, stirring occasionally ( for more flavor or spice, add more pepper sauce or chili powder). Serve over bed of rice with lemon as garnish.
