A savory Southern way to serve this lovely vegetable from an old cookbook. Make Creole Cauliflower au Gratin by sprinkling 1/2 cup of grated cheese on top and baking in the oven until melted and lightly browned.
Ingredients:
4 tablespoons butter
1 onion, minced
1/2 chopped bell pepper
3 tablespoons flour
2 cups cooked tomatoes (canned is fine)
3/4 teaspoon salt
3 cups cooked cauliflower
Directions:
1. Melt butter in a saucepan; add onion and bell pepper, lightly brown
2. Blend in flour; add tomatoes and salt
3. Heat to boiling point and cook for approximately 3 minutes, stirring constantly
4. Add cauliflower and heat through. Serve on buttered toast
