Creole Candied Yams

Ingredients:
1 (30 ounce) can whole yams
1 lemon, juice of
1 teaspoon cinnamon
1/2 cup dark brown sugar
2 tablespoons butter, plus
1 tablespoon butter
1/4 cup seedless raisin
1 apple, cored and sliced
2 peaches, peeled and sliced
Directions:
1. Preheat oven to 400 degrees.
2. Place yams in a casserole dish, pouring the liquid into a bowl.
3. Add the lemon juice, cinnamon and sugars and mix until dissolved.
4. Pour the mixture over the yams.
5. In separate bowl, combine the raisins, apple and peaches.
6. Add the yams.
7. Dot with butter.
8. Bake for about 45 minutes or until the syrup has thickened slightly and the yams look glazed.
