I saw this recipe recently on TV and it looked so good, I thought I would bring it to work for treats. I wasn't able to get mint chocolate chips so I used Neilson Mint Buds which I chopped up in my food processor and used chopped up mint patties to decorate the top. It was a big hit!
Ingredients:
1 cup butter, softened
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa
1/2 teaspoon baking powder
10 ounces mint chocolate chips
1/2 cup butter, melted
1/3 cup unsweetened cocoa
2 cups confectioners' sugar, sifted
1 teaspoon vanilla extract
2 tablespoons milk
15 peppermint patties, chopped
Directions:
1. Preheat the oven to 350 degrees F.
2. Grease a 9 x 13 x 2 pan.
3. Using an electric mixer, combine the butter and sugar in a large mixing bowl.
4. Beat at medium speed until creamy.
5. Add the eggs, one at a time, beating well after each addition.
6. Add the vanilla, mixing well.
7. In a separate bowl, combine the flour, cocoa and baking powder.
8. Gradually stir into the butter mixture.
9. Fold in the mint chips.
10. Spoon into the greased pan and bake for 35 minutes.
11. While the brownies are baking, prepare the frosting.
12. Combine the butter, cocoa, confectioners' sugar, vanilla and milk in a large mixing bowl.
13. Beat at medium speed with an electric mixer until the dry ingredients are moistened.
14. Beat at high speed until of spreading consistency.
15. Remove the pan from the oven and allow the brownies to cool in the pan on a wire rack.
16. Spread with the chocolate frosting.
17. Top with the chopped mint patties.
