It's not soup weather, here, but I figure ya know what... it's gotta be cold and/or rainy somewhere, and I really wanted to attempt this after hearing this is good enough to just eat with a spoon about some roasted tomatillo salsa I had for another recipe. Read more . I thought...hmmm.... why not! Just treat it like a tomato and build a soup around it. This turned out delicious and it can be as easy or as complicated as you'd like, depending on if you go totally homemade, or use some quality packaged options.
Ingredients:
2t butter
2t olive oil
1 large onion, diced
3 cloves garlic
2 cups hot or mild roasted tomatillo salsa(including roasted tomatillos, chilies, onion, cilantro and lime juice)
12oz tomatillo sauce(this can be made fresh, just like a tomato sauce or, you can buy this at some specialty markets or sections. it might also be labeled as green taco sauce ie la victoria brand)
7oz mild or hot diced chilies(canned is fine, include the liquid)
4 cups chicken stock(or use veggie for a vegetarian soup)
pinch of baking soda(to help slightly reduce acidity)
7-8oz mexican crema(table cream-this is sold in either the mexican section of larger markets or even near the other canned milks like evaporated. nestle makes one that seems to be fairly widely available)
kosher or sea salt and fresh ground pepper
fresh cilantro for serving
tortilla strips for serving
Directions:
1. In large soup pot, melt butter and olive oil.
2. Add onion and cook over medium heat, stirring often, until beginning to soften.
3. Add garlic and cook another 5 minutes.
4. Add salsa, tomatillo sauce, chilies, stock and salt and pepper and stir well.
5. Bring to a high simmer and cook about 15 minutes or so(longer is fine).
6. Add baking soda(it may bubble up, but don't worry, just stir it a lil :) then crema and stir well.
7. Serve when heated through. Do not boil after the crema is added.
8. Sprinkle with fresh cilantro and tortilla strips at serving, if desired.
9. *I served this with pepperjack and olive quesadillas.
