I wanted to create a side dish to go with Sour Burger And Meat Ball Steak and all I could think about when reading the recipe was meatloaf and mashed taters ... Read more so, I made the patties into meatballs and added these to the side. What a wonderful combo! Classic...with an Asian twist!
Ingredients:
1 1/2lbs raw potatoes, peeled and diced
4-5 cloves garlic whole but smashed a lil bit
1/2 stick butter, room temp
about 1/2 cup milk, room temp(may need a lil more or less depending on type of potato and desired consistency)
4-6t creamy wasabi sauce(this isn't a 100% wasabi paste, it's a creamy condiment that adds a few other ingredients and sometimes uses regular horseradish as well as wasabi)
a handful of fresh chives, snipped
kosher or sea salt and fresh ground pepper
Directions:
1. Put potatoes in a large pan and cover with water. Add garlic.
2. Bring to a boil and continue to boil for about 12-15 minutes, until fork tender.(this is assuming you've diced your potatoes into 1inch pieces, or so. Larger pieces will take longer :)
3. Drain well then immediately put back in bowl(or the bowl of your stand mixer, if desired) and add the butter and wasabi sauce.
4. Mash or mix well.
5. Add milk as desired while mashing until desired consistency.
6. Add chives and salt and pepper and mix well.
7. Serve immediately.
