Creamy Vegetables & Fettuccine

A colorful pasta side dish, serve with roast and a green salad for a heart meal. From Land-O-Lakes Cookbook
Ingredients:
2 cups carrots, diagonally sliced
6 ounces fettuccine, uncooked
2 cups broccoli florets
6 tablespoons butter or 6 tablespoons margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 cup milk
1/4 cup parmesan cheese, grated
1/4 teaspoon hot red pepper flakes (optional)
Directions:
1. in 3 qt saucepan bring 8 cups of water to a full boil.
2. add carrots and fettuccine. cook over medium heat for 6 minutes.
3. add broccoli, conitnue cooking until carrots and broccoli are crispy tender (4 to 5 min) drain.
4. rinse with hot water, and set aside.
5. in same saucepan melt butter.
6. stir in flour, salt and nutmeg until smooth and bubbly (1 min).
7. add milk, cook over medium heat stirring occasionally, until mixture comes to a full boil.
8. stir in fettuccine mixture.
9. reduce heat to low, continue cooking until heated through.
10. to serve; sprinkle with Parmesan cheese and hot pepper flakes is using.
