Creamy Vegetable Soup

This is a quick and delicious vegetarian style soup. But just replace veg stock with chicken stock and add some diced chicken pieces into this soup if you are a meat lover. Either way I guarantee you will enjoy this recipe =]
Ingredients:
3 tbl butter
1 onion, finely chopped
3 potatoes, peeled and diced
3/4 cup celery
2 cps carrots, peeled and sliced
2 tsp salt and pepper
3 cps vegetable stock
3 cps milk
1/2 tsp dried parsley
1/4 cup cold water
1/4 cup cornstarch
Directions:
1. Melt butter in large saucepan over med hi heat.
2. Add onions, carrots and celery and cook for 10 minutes until carrots become slightly tender.
3. Add stock, potatoes, salt and pepper.
4. Bring to a boil and allow to simmer 15-20 mins until vegies are tender.
5. Add milk and parsley then heat to boiling.
6. In a seperate bowl mix water and cornstarch.
7. When dissolved add to hot soup.
8. This is also good with oyster crackers =P
