Creamy Vegetable Casserole

This recipe was made by just throwing things in my fridge together. The end result melded GREAT with pepper jack corn muffins, and peppercorn and garlic pork loin.
Ingredients:
1 large new potato
1 medium onion
1 cup broccoli cutlets and wholes
1 cup mixed veggies
1 can cream of potato soup
1 can of milk (can from cream of potato soup)
garlic powder
onion powder
basil
salt
pepper
Directions:
1. Preheat oven to 350
2. mix last 5 ingredients together and set aside (this the seasoning that I mix and use for a lot of things. It tastes great on chicken and in ground beef)
3. cut potato in about 1 inch cubes
4. chop onion to preferred size
5. mix all ingredients together
6. cover and bake for 30 minutes
7. uncover and continue to bake until potatoes are soft when poked with a fork (about 5-10 more minutes)
8. let sit for 5 minutes to thicken
9. serve and enjoy. tastes great with pork.
