Creamy Topless Sandwich

Had this from an organic Cafe , so good and so easy !
Ingredients:
2 slices whole wheat bread (to keep carbs down)
cottage cheese
6 slices zucchini
6 slices eggplants
6 slices summer squash
10 g roasted chopped onions
oregano
olive oil
Directions:
1. Grill zucchini, eggplant and squash.
2. Season the slices l-i-g-h-t-l-y with oregano and olive oil.
3. Spread the bread with the cottage cheese - as much as you like.
4. Layer the slices of zucchini, eggplant and squash on the slices of bread.
5. Do NOT put the slices of bread together.
6. Sprinkle onion on top of each slice.
7. Dig in !
