Creamy Roasted Red N Yellow Beet Apple Soup

An eye-pleasing comforting, healthy soup served as appetizer or as a warm soothing brunch. Created especially for my friend puddlewonderful.
Ingredients:
3 red beets
3 yellow beets
8 c. veg or chicken broth
2 cups apple jiuce
3 tbls unsalted butter
3 granny smith apples
3 tbls. fresh lemon juice
salt and pepper to taste
creme fraiche
Directions:
1. Place beets in large pot and cover with broth and juice
2. bring to boil then lower to simmer partially covered 45 min.
3. remove cool and slip off skins.
4. remove with slotted spoon to bowl
5. halve or quarter and place on cookie sheet
6. drizzle a little oil and roast at 325-400 for about 10-15 minutes
7. do not allow to dry out
8. strain broth and return to pot
9. melt butter in large skillet...med. ihgh
10. add peeled, cored and sliced apple and saute until carmelized 10 min
11. puree beets in processor with apples in food processor adding broth through top tube
12. return puree to pot
13. combine with broth and add lemon salt and pepper
14. -
15. make one batch with yellow and one with red beets
16. halving the other ingredients to make 2 batches
17. when serving (hot or cold) put red beet mixture in first and then swirl yellow beet mixture in
18. add creme fraiche in center or serve on the table
