I was craving potato soup but couldn't find a recipe I wanted to use, so I made up my own!
Ingredients:
2 large baking potatoes (peeled and cubed)
1 white onion (chopped)
2 cloves garlic (chopped)
2 8 ounce cans chicken stock
1 cup bacon crumbles (can buy a package in the salad aisle of the grocery store, or cook and crumble your own. i'm lazy, so i buy it! lol)
2 cups shredded cheddar cheese
1 cup half & half
3 tablespoons flour
1 tablespoon butter or margarine
2 teaspoons ground black pepper
1 teaspoon salt
Directions:
1. Put cubed potatoes in a medium sized pot and pour chicken stock over potatoes to cover and boil until tender
2. In the meantime, melt butter in slightly larger pot, add onions and garlic and cook over low- medium heat until tender.
3. Mix blour with the onions, pour chicken stock from potatoes into the onion pot.
4. Stir half&half, pepper, and salt into the chicken stock.
5. Add potatoes into the chicken stock pot.
6. Stir in 1/2 cup bacon and 1 cup cheddar cheese.
7. Stir over low-medium heat until cheese melts and soup begins to thicken.
8. Use remaining cheese and bacon to sprinkle over soup when serving.
