Creamy Parmesan Mushroom Chicken

If you prefer a lot of sauce, then just double the ingredients, a can of sliced drained mushrooms may be used in place of fresh, but fresh is always better to use.
Ingredients:
4 -5 boneless chicken breasts
salt and pepper
3 tablespoons cooking oil (or as needed)
1 small onion, chopped
1 tablespoon minced fresh garlic (or to taste)
2 cups sliced fresh mushrooms
1/4 cup butter
5 teaspoons flour
1 cup half-and-half cream or 1 cup whole milk
1/2 cup grated parmesan cheese
Directions:
1. Prepare a large serving dish or plate (make certain that it has high sides to hold the sauce from spilling).
2. Season chicken with salt and pepper.
3. Brown and cook the chicken breasts in oil on both sides until juices run clear and chicken is cooked through.
4. Place the cooked chicken in the serving dish.
5. In the same frypan, saute the onions, garlic and fresh mushrooms in 1/4 cup butter until onions are soft (about 4-5 minutes).
6. Sprinkle with flour; stir until coated (about 1 minute).
7. Add in cream or milk (if using) bring to a boil simmer for about 2 minutes or until thickened.
8. Remove from heat.
9. Stir in 1/2 cup Parmesan cheese.
10. And pour the sauce over chicken in serving dish.
11. Sprinkle with more grated Parmesan cheese before serving.
12. Serve this on top of cooked linguini or spaghetti pasta.
