Creamy Onion Soup

Three different types of onion combine in this creamy, comforting soup... it works great with an open faced cheesy sandwich, for an easy, inexpensive winter dinner.
Ingredients:
6t butter
1 large red onion, roughly chopped
1 sweet onion, roughly chopped
2 medium or 1 large shallot, chopped
3 cloves garlic
1/4 cup flour
8 cups beef stock
8oz colby jack cheese, shredded
1-1 1/2 cups cream
1-3t hot sauce
fresh ground black pepper
Directions:
1. Saute onions in butter over medium heat, stirring often, until beginning to soften. Add garlic.
2. Add flour and stir well to coat all flour with butter. It will be pasty...that's okay, it's supposed to!
3. Add stock and black pepper.
4. Increase heat and bring to boil.
5. Decrease heat and simmer for about 45 minutes or so, stirring occasionally.
6. Add cheese a bit at a time and stir well to melt.
7. Add cream and hot sauce cook just until heated through.
8. Taste and add more pepper, if needed.
