Creamy Mushrooms With Roasted Garlic

Earthy mushrooms made savory with roasted garlic and a beautiful richness from sherry, butter and cream cheese.
Ingredients:
2 tablespoons olive oil
1 lb button mushroom, whipped clean and cut into 1/4
1 tablespoon cream cheese
1 teaspoon butter
1 bulb garlic, roasted and removed from skins and mashed with fork
1 teaspoon fresh thyme leave, chopped
1/4 teaspoon lemon zest
1/2 cup dry sherry
Directions:
1. In a large heavy skillet, heat the oil over high heat.
2. Add the mushroom quarters.
3. Do not move the mushrooms until they have caramelized. When the bottoms are browned, stir them and continue to cook for about 5 minutes.
4. Add cream cheese and butter and cook and toss for 5 minutes, until nicly coated.
5. Add the rest of ingredients stir for 2 minutes cooking till mushrooms are coated.
6. Garnish with fresh thyme leaves.
