Creamy Lemon Tart

the filling for this tart is so creamy u will want lick the pot i love it so does my family
Ingredients:
1 cup sugar
1/4 corn flour
1 cup milk
3 egg yolks beaten
1/4 cup of butter
1tbs lemon zest
100mls lemon juice
1 cup of full fat sour cream
1 9inch pastry shell
Directions:
1. bake pastry shell until lightly golden then allow to cool
2. in a medium sauce pan combine sugar and corn flour gradually add milk and mix until smooth
3. cook over medium heat until thick stirring constantly reduce heat and cook for another 3 minutes remove from heat
4. stir half a cup of hot mix to the egg yolks and return all mix back to the pot bring to a gentle boil stirring at all times cook for another 2 minutes mix will be very thick
5. remove from heat stir in butter and lemon zest gently stir in lemon juice
6. cover and cool completely but not in fridge once cooled fold in sour cream pour into pastry shell and chill in the fridge for two hours before serving
