This is an easy healthy-but-creamy-cheesy dish I came up with when I didn't know what to cook, but had fresh broccoli and felt like something fast and comforting.
Ingredients:
2 cans 12.5 oz. premium diced ham (i use harvest creek from costco)
approx. 2 cups fresh broccoli florets (you could use frozen if you don't have)
1 can cream of broccoli soup
1 14 oz can of chicken broth
4 oz. light cream cheese
1 cup shredded cheddar cheese
1 tbls dijon mustard
1/2 tsp thyme
1/2 tsp mccormack roasted garlic and red bell pepper seasoning (or just add minced garlic or omit altogether)
pasta - i used approx. 8 oz. of shells - use any kind you like and more or less
Directions:
1. Bring water to boil for pasta - cook according to directions
2. Meanwhile in large saute pan, add cream of broccoli soup, chicken broth, and ham and bring to boil
3. Reduce to simmer and add broccoli
4. Add thyme and garlic seasoning
5. Remove from heat and add cream cheese (I use back of large spoon pressing against cream cheese and go in circular motion till incorporated)
6. Put back on simmer
7. Add dijon
8. No need to salt because of the ham, soup and cheese
9. When pasta's done, drain and add to pot
10. Add cheddar and stir till melted
11. Serve and enjoy!
