Ingredients:
4 ounces silken tofu
2 tablespoons light miso
1 tablespoon rice vinegar
1 tablespoon chopped scallion
2 teaspoons fresh grated ginger
1/3 cup orange juice
1 teaspoon soy sauce
1 teaspoon brown sugar
1 teaspoon dark sesame oil
Directions:
1. Combine all of the ingredients in a blender or food processor and puree until smooth.
2. Covered and refrigerated, this dressing will keep for about a week.
