This is a creamy coconut rice made with Coconut Cream Concentrate and no dairy! This recipe can easily be tweaked with fresh/dried herbs and chicken stock in replace of some of the water. Recipe is from
Ingredients:
1 cup organic brown rice
2 cups water
1 tablespoon organic coconut oil
3/4 cup water mixed with 2 - 3 tablespoons tropical traditions coconut cream concentrate
1 teaspoon freshly ground black pepper
2 teaspoons salt
garnish: dried unsweetened flaked coconut, toasted
Directions:
1. Place all ingredients (except toasted coconut) together in heavy pot with lid or in rice cooker.
2. Stir everything together until blended.
3. Cook on medium heat until rice is cooked, 30-40 minutes.
4. Fluff and place on serving platter and top with garnish.
5. Serve with chicken and veggies and enjoy!
