Creamy Chicken & Wild Rice Soup
Ingredients:
3 c. chicken broth, low sodium, fat free
3 c. skim milk
1 1/2 c. baking potato, peeled & cubed
2 c. chopped chicken breast
10 oz velveeta light, cubed
2 tbsp garlic, minced
1 c. onion, chopped
1/3 c. all purpose flour
2 tsp. pepper
1 c. wild rice, quick cooking, uncooked
1 c. water
Directions:
1. Cook rice according to package, omitting salt and fat.
2. Heat large Dutch oven oven medium-high heat. Use cooking spray. Saute onion & garlic 3 minutes. Add broth, water and potato; bring to a boil. Cover, reduce heat and simmer 5 minutes or until potato is tender.
3. Combine milk & flour stirring well. Add milk mixture to potato mixture. Cook 5 minutes or until slightly thick. STIR CONSTANTLY. Remove from heat. Add cheese until melted. Stir in rice, chicken and pepper.
