Creamy Cheese Sauce for Pasta

Each serving is 1/4 cup. 1 Fat Exchange. This came from Diabetes Forecast magazine. I have not tried this, just posting for safe keeping.
Ingredients:
1 tablespoon olive oil
4 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1/2 cup rehydrated sliced sun-dried tomato
1/2 cup pasta water (reserve this after the pasta has been cooked and drained)
2 tablespoons grated fresh parmesan cheese
1/2 cup low-fat ricotta cheese (figro recommended)
1/3 cup reduced-fat goat cheese
2 tablespoons diced prosciutto
2 tablespoons minced parsley
kosher salt
fresh ground black pepper, to taste
cooked pasta
Directions:
1. Heat the oil over medium-high heat in a large skillet. Add the garlic, crushed red pepper, sun-dried tomatoes, and pasta water.
2. Add the Parmesan, ricotta, goat cheese, and prosciutto to a large bowl. Add in the garlic-tomato mixture. Add the parsley, and season with salt and pepper. Toss with cooked pasta.
